Healthy Pumpkin Oat Bread
Use this as a healthy alternative this fall season. With Thanksgiving around the corner we have to make some sacrifices during the week so we can splurge on Thanksgiving Day.
INGREDIENTS
15 oz can of Pumpkin Puree
2 Eggs
1/3 Cup Honey
1/2 tsp Vanilla Extract
2 Cups of Rolled Oats
1 tsp Baking Soda
1 tsp Cinnamon
1/2 tsp Nutmeg
INSTRUCTIONS
Preheat oven to 350 F. Spray your 9 inch bread baking dish with coconut oil or whatever oil you prefer so it doesnβt stick to the pan.
Add all ingredients to a food processor or blender and blend until all ingredients are combined. Once complete, pour the batter into the baking dish.
Bake 35-40 mins. You will know the bread is done when you can insert a toothpick and it comes out clean.
Wah-lah, your bread is complete!
NOTES
I would add some type of chocolate chips or something sweet because this bread can taste a little bland.
Mine took 40 mins to cook through, so just check it at the 35 mark, maybe your oven is better than mine!
Pairs great with a Pumpkin Spice Latte or Hot Chocolate!
