Healthy Pumpkin Oat Bread

INGREDIENTS

15 oz can of Pumpkin Puree

2 Eggs

1/3 Cup Honey

1/2 tsp Vanilla Extract

2 Cups of Rolled Oats

1 tsp Baking Soda

1 tsp Cinnamon

1/2 tsp Nutmeg

INSTRUCTIONS

  1. Preheat oven to 350 F. Spray your 9 inch bread baking dish with coconut oil or whatever oil you prefer so it doesn’t stick to the pan.

  2. Add all ingredients to a food processor or blender and blend until all ingredients are combined. Once complete, pour the batter into the baking dish.

  3. Bake 35-40 mins. You will know the bread is done when you can insert a toothpick and it comes out clean.

  4. Wah-lah, your bread is complete!

NOTES

  • I would add some type of chocolate chips or something sweet because this bread can taste a little bland.

  • Mine took 40 mins to cook through, so just check it at the 35 mark, maybe your oven is better than mine!

  • Pairs great with a Pumpkin Spice Latte or Hot Chocolate!
